Cold-busting Mega Fruit Muffins

The cold virus has been running rampant through our house. Just as soon as one of us starts to feel better, another one goes down for the count. We need a Vitamin C infusion, stat. I pulled out my trusty cookbook (aka allrecipes.com) and started hunting for the answer. What I found was a base muffin recipe which I could transform into a cold-busting machine.

This mega fruit muffin is loaded with really healthy ingredients, but includes just enough of the non-healthy stuff to keep it firmly in the treat category. It is the perfect food to put someone with a cold on the path to recovery. Enjoy!

Cold-busting Mega Fruit Muffins

These muffins are bursting with vitamins to help you fight off the worst of the winter colds.

Wet Ingredients
  1. 1/4 cup butter or margarine
  2. 1 and 1/3 cups of sugar or sugar substitute
  3. 1/2 cup greek-style yogurt
  4. 2 bananas
  5. 2 eggs
  6. 1 tbsp vanilla extract
Dry Ingredients
  1. 1 and 1/2 cups wholemeal flour
  2. 1/2 cup oatmeal
  3. 1 tsp baking soda
  4. 1 tsp baking powder
  5. 1 tsp cinnamon
  6. Zest from 1/2 small orange, tangerine or clementine
  7. Zest from 1/2 lemon
Fruit
  1. 1/4 cup fresh cranberries
  2. 1/4 cup diced orange slices
  3. 1/4 cup diced mango
  4. 1/4 cup diced kiwi
Instructions
  1. Preheat oven to 350F (175C).
  2. In a large mixing bowl, cream the butter. Add in the sugar and mix well. Add in the eggs, vanilla, yogurt and bananas. Mix well until the banana is blended into the batter.
  3. Add the dry ingredients to the wet mixture and mix just until a wet batter is formed. Add in the remainder of the fruit and stir until the fruit is spread throughout the batter.
  4. Spoon the batter into a greased muffin tin and bake in the oven for 15-17 minutes.
Notes
  1. Feel free to swap out the fruit with any favorite of yours - apples, pears and blueberries work equally well.

    Those look really good despite my loathing of all fruit In baked goods. Here in Thailand I’d probably swap orange slices for mango. And of course I still think a few chocolate covered espresso beans for mamas would be nice. Loving your new recipes.
