Buttery Southern Biscuits

I loved going to family gatherings as a kid. My uncle would wake up early and make a mountain of buttery southern biscuits, bacon and fried ham for breakfast. That he kept my mom in margaritas all day didn’t hurt either. But those biscuits, we could not get enough of them.

Now that I am older and have kids of my own, I love to get up on the weekends and warm the house up with the smell of butter, honey and fresh baked bread. It is heavenly and a nice alternative to the bowl of cold cereal we eat during the week.

Here is my secret family recipe for old fashioned buttery Southern biscuits. As I live far from home, I’ve learned to make everything from scratch. If you live somewhere that Bisquick is sold, you can substitute that for the flour, baking soda, cream of tartar and salt (just use the same amount as the flour in the original recipe).

Buttery Southern Biscuits

Biscuits are a staple of the Southern meal. You can pair them with dripping honey, butter, jam, gravy, eggs, cheese, any breakfast meat or even syrup. The most important thing is to eat them while they are still warm.

Dry Ingredients
  1. 2 Cups of Plain Flour
  2. 1 Tbsp of Baking Powder
  3. 1/2 Tsp of Cream of Tartar powder
  4. 1/4 Tsp of Salt
Wet Ingredients
  1. 2 Tbsp Cold Butter
  2. 4 oz Sour Cream or Greek-style Yogurt
  3. 1/2 Cup Club Soda or Soda Water
  4. 1/4 Cup Club Soda or Soda Water (set aside)
Instructions
  1. Preheat oven to 450F (220C). Spray a baking sheet with non-stick spray and set aside.
  2. In a large mixing bowl, combine all of the dry ingredients together and mix well. Add in the butter and cut into small pieces (you can use a pastry knife or a regular knife) and mix into the flour mixture until it resembles small crumbs. Make sure to get the butter pieces small so that they will mix throughout the biscuit mixture.
  3. Add the sour cream and larger amount of club soda to the dry mixture and stir to combine. Use your hands to form a ball of dough. If the mixture is too dry, add a few drops of the extra club soda until all of the flour is combined into the dough.
  4. Turn the dough out onto a floured counter top or piece of grease paper. Using your fingers, smooth the dough out until it is 1cm thick.
  5. Use a biscuit cutter or small cup to cut nice round biscuits. Keep reforming the dough until you have used all of it. It should make 10-12 biscuits.
  6. Place the biscuits on the baking sheet and bake in the oven for 7-9 minutes, until they are a nice golden yellow or light brown on the top. Serve piping hot.
Notes
  1. Once you master the basic recipe, you can start experimenting with it. Try adding in grated cheddar cheese before you add the sour cream and club soda. You can also put garlic powder, thyme and rosemary in to turn them into dinner biscuits.
